The cooking is creative, and brilliantly works with the fragrances gleaned from around the Mediterranean Basin.The new chef Nicolas Rondelli, composes, every evening, a true symphony of the senses that you can enjoy in the majestic setting of the panoramic terrace, with its roof of white canvases and the Mediterranean Sea as the backdrop.

Olivier Capara's aspargus cooked in Vallauris' clay with Menton' lemon flavors and lardo di Colonnata
Lightly seared prawns, pea purée, crab with citrus fruits
